Innovative food preservation method

The SUPERSHIELD ANR (Agence Nationale de la Recherche) project, coordinated by INRAE’s FRISE research unit in Antony, aims to improve knowledge of superchilling and to develop tools that will enable the deployment of this promising technique, which is still confidential in France. Superchilling involves preserving products in a partially frozen state, significantly extending their shelf life compared with fresh products, while retaining organoleptic qualities similar to those of fresh products.
